Ingredients:

– 2 1⁄2 tablespoons oil
– 3⁄4 cup finely chopped onion
– 1 egg, lightly beaten
– 3 drops soya sauce
– 8 ounces chicken, chopped
– finely chopped carrot
– peas
– 4 cups cold cooked rice, grains separated
– green onions, chopped
– 2 tablespoons light soya sauce

Cooking method:

Take a pan and heat 1 tbsp oil in it, then add chopped onions and stir fry until onions turn into a nice brown color, about 10 minutes and then remove from the flame.
Now mix egg with 3 drops of soya sauce and set aside.
Add 1/2 tbsp oil to the pan, swirling to coat surfaces, then add egg mixture in pan, cook egg until egg sets against pan when egg puffs, flip egg and cook other side finely and then take it out from the pan. Then chop the cooked egg into small pieces.
Now heat 1 tbsp oil in pan then add chicken cubes, along with carrots, peas, and cooked onion, fry for 2 minutes.
Then add rice, green onions, tossing to mix well and stir fry for 3 minutes.
Now add 2 tbsp of light soya sauce and chopped egg to rice mixture and stir fry for 2 minute more.
Delicious Chinese Fried Rice are ready to serve.
