As we all know salads are very healthy and full of nutrition. Black Bean and Corn Salad is very colorful and includes a very tasty lime dressing. Black beans are a very good source of cholesterol- lowering fiber, as are most other legumes. Corn is high in fiber, low in fat and a great source of essential nutrients. So Black Bean and Corn Salad is very healthy to eat.

Ingredients:

– 1/3 cup fresh lime juice
– 1/2 cup olive oil
– 1 clove garlic, minced
– 1 teaspoon salt
– 1/8 teaspoon ground cayenne pepper
– 2 (15 ounce) cans black beans
– 1 1/2 cups frozen corn
– 1 avocado
– 1 red bell pepper chopped
– 2 tomatoes chopped
– 6 green onions, thinly sliced

Cooking Method:

Add lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are mixed very well.
Take a big bowl and add, beans, corn, avocado, bell pepper, tomatoes and green onions. Shake lime dressing well, and pour it over the salad. Stir salad to coat vegetables and beans with dressing.
